Vegan Biscuits and Gravy Recipe

Weekend brunch is one of my favorite meals. I have more time to spend in the kitchen, making meals I don’t always get to enjoy during the week. Biscuits and gravy have been a favorite for years, and this vegan version is just as good. The best part is it’s super easy to make and only takes a few ingredients.
I start with vegan Impossible sausage, sometimes savory, sometimes spicy, depending on what I’m in the mood for. The sausage cooks quickly and gives the gravy a hearty base.
For the gravy, I use unsweetened soy milk. Almond and cashew milk give it a flavor I don’t love, but soy milk, especially West Life soy milk, keeps the taste neutral so the seasoning stands out. I use oat flour to thicken it because I prefer to not eat a lot of gluten. If you don’t want gluten-free, you can use all-purpose flour.
The seasoning is simple: salt, pepper, garlic powder, and … a little Old Bay Seasoning. A friend shared that tip with me, and now I can’t make biscuits and gravy without it. Just ¼ teaspoon stirred in or a sprinkle on top before serving adds an extra kick of flavor.
I serve the gravy over warm vegan biscuits. Annie’s store-bought biscuits are my go-to.
These vegan biscuits and gravy are perfect for a lazy weekend brunch, but they’re just as good for a quick weeknight dinner. Once you try it, you’ll see why it’s always on my brunch list.
4 tbsp vegan butter (such as Earth Balance), optional
1 package Impossible Vegan Sausage
1/4 cup all-purpose white flour or oat flour for gluten-free
2-3 cups soy milk (unsweetened)
1/4 tsp salt
1/4 tsp garlic powder
1/8 tsp black pepper
1 can store-bought vegan biscuits, cooked according to package.
Cook the vegan sausage in a large saucepan, breaking it into small pieces as it cooks. Add the vegan butter and let it melt. Sprinkle the flour, garlic powder, salt, and pepper over the cooked sausage, stirring to coat evenly. Cook over low heat for about 1 minute.
Slowly pour in the milk, stirring constantly to combine and remove any lumps. Bring to a gentle boil, then reduce to medium-high heat. Continue cooking, stirring occasionally, until the gravy reaches your desired consistency.
