When I first started eating chickpeas, they kind of freaked me out. Raw chickpeas have a bit of a chicken-y taste and I just wasn’t too sure about them. I wanted to love them tossed into salads and buddha bowls, but there was just something about them that I just wasn’t too sure about.
I love raw chickpeas in chickpea salad, but just to eat plain was just too much. That is until I started making roasting them! Roasted chickpeas are delicious, especially when seasoned. Season them with your favorite seasonings to go with whatever you’re making. Tacos? Season them with taco seasoning. Buffalo bowl? Roast them then toss in buffalo sauce. There are so many ways to season chickpeas. One of my favorites is Greek-seasoned Roasted Chickpeas.
How to Make Crispy Roasted Chickpeas
Want to make your chickpeas really crispy? The key to crispy roasted chickpeas is to make sure that they’re dry. After rinsing, use a lint-free towel to dry your chickpeas. Once dry, toss with olive oil and your seasonings. Line a baking sheet with parchment paper and bake. Use a baking sheet or pan with higher edges to keep them from rolling off the pan.

Crispy Roasted Chickpeas with Greek Seasoning
Ingredients
For the Chickpeas
- 1 can chickpeas -- drained, rinsed, & dried or 1 1/2 cups of cooked chickpeas
- 1 tbsp olive oil
Greek Seasoning Blend
- 1.5 tbsp oregano
- 1.5 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp ground black pepper
- 2 tsp dried parsley
- 1.5 tsp salt
- 1.5 tsp paprika
- 1 tsp thyme
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
Instructions
Greek Seasoning Blend
- Add all seasoning ingredients to a bowl and stir until well combined.
Roasted Chickpeas
- Preheat oven to 425 Degrees. Line baking sheet with parchment paper.
- Drain and rinse chickpeas. Using a lint-free towel, pat gently to dry chickpeas completely.
- Add chickpeas to a large bowl and toss with 1 tbsp of olive oil and 1-2 tablespoons of the Greek seasoning depending on your taste.
- Place chickpeas onto baking sheet with parchment paper in a single layer and bake 20 - 30 minutes until crispy. Shake the pan halfway through baking to turn chickpeas.
- After 20 minutes of baking, watch closely to ensure they don't burn.
