Add all seasoning ingredients to a bowl and stir until well combined.
Roasted Chickpeas
Preheat oven to 425 Degrees. Line baking sheet with parchment paper.
Drain and rinse chickpeas. Using a lint-free towel, pat gently to dry chickpeas completely.
Add chickpeas to a large bowl and toss with 1 tbsp of olive oil and 1-2 tablespoons of the Greek seasoning depending on your taste.
Place chickpeas onto baking sheet with parchment paper in a single layer and bake 20 - 30 minutes until crispy. Shake the pan halfway through baking to turn chickpeas.
After 20 minutes of baking, watch closely to ensure they don't burn.
