Vegan Chipotle Cheese Sauce

Friends, if there’s’ one thing I keep stocked in my fridge, it’s this Vegan Chipotle Cheese Sauce. It is the perfect sauce for almost EVERYTHING!! Having Mexican food? Add some Chipotle Cheese Sauce! Buddha bowl? Add Chipotle Cheese Sauce! Homemade fries? Dunk them in Chipotle Cheese Sauce!

This sauce is a modification of my vegan cheese sauce used for mac & cheese or my queso dip.

The best part, it’s super fast and super easy to whip up a batch and it keeps in the fridge for about 1-1 1/2 weeks. As if you’ll have any left after a week!

Vegan Chipotle Cheese Sauce

Ingredients

  • 1 cup raw cashews (soaked in hot water for at least 2 hours)
  • 3/4 cup hot water
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 tsp cumin
  • 1/8 tsp chili power
  • 1/2 or more chipotle pepper in adobo sauce (use more if you like it spicy!)

Instructions

  • Soak cashews in hot water for at least 2 hours. Drain and rinse. Add all ingredients (including the 3/4 cup hot water) to a blender and process until smooth. Add more water if needed for desired consistency.
    Serve warm or cold.
