Many of us right now are working from home so I thought I’d share a fast, easy, and delicious soup recipe for those of you who are still on the clock but need a quick, warm meal. This vegan tortilla soup is such an easy recipe and a great way to use up some produce that you need to use up.
The best way to make this soup is in a Vitamix, but if you don’t have one, a regular blender will do but you may need to blend it a little longer then throw it in a saucepan on the stove to heat.
Easy Vegan Tortilla Soup
- 1 cup vegetable broth
- 1 roma tomato (halved)
- 1 carrot (halved)
- 1 small slice zucchini
- 1 thin slice purple cabbage
- 1 mushroom
- 1 garlic clove (minced)
- 1 tsp taco seasoning
- 1/4 tsp black pepper
- 1/4 tsp salt
- dash cumin
- 1/4 cup cooked quinoa (optional)
- 1/2 cup black beans (optional)
- chopped spinach (optional)
- jalepenos (optional)

Place all ingredients into blender.

If using a Vitamix, switch to the soup program and blend. If using a different blender, blend 2-4 minutes until smooth. The Vitamix soup program will heat the soup, but if not using, once blended, heat on stove until warm.

Top with optional ingredients or any other favorites such as tortilla strips, vegan cheese, vegan cashew cream, diced onions, and avocado.
